Pure Iberian Acorn-Quality Shoulder Maldonado
Purebred Iberian pigs; the unique ecosystem of Alburquerque, in the heart of the Extremadura Dehesa; more than 20 months feeding; holmoaks woodlands, acorn, pastures, pure air, water, sun... ... and, of course, with the expertise of Manuel Maldonado; the true master and international guru in the exclusive iberian production.
Appearance: A medium-size shoulder, with a thin shank and black hoof. The outer side is covered with a thick layer of glossy fat. The inner side shows traces of white or bluish-grey fungal growth, an unmistakable feature of slow ageing in the cellar. Ingredients: Shoulder (front leg) cut ham produced from acorn quality ("bellota" grade) pure breed Iberian pigs, salt. No preservatives. The curing process and characteristics of this product is essentially the same as with the pure acorn-fed Ibérico ham - hind legs (or jamón). The minimum curing period is 12 months. Tasting notes: Cutting reveals a rosy-to-purplish-red colour with glossy streaks of marbling fat in the flesh. Very slightly salty. Full-bodied, intense aromas, highly nuanced. Subtle, delicate flavour. Presentation: the ham comes individually wrapped with gauza and greaseproof paper to protect them in transit.
