Lomito (Acorn-Quality Iberian Pork) Maldonado
Purebred Iberian pigs; the unique ecosystem of Alburquerque, in the heart of the Extremadura Dehesa; more than 20 months feeding; holmoaks woodlands, acorn, pastures, pure air, water, sun... ... and, of course, with the expertise of Manuel Maldonado; the true master and international guru in the exclusive iberian production.
Appearance: Maldonado follow only traditional methodology and production techniques of yesteryear. They do not shape or stylise the products, opting instead to allow them to have their own unique appearance. Ingredients: The Lomitos come from acorn quality ("bellota" grade) pure breed Iberian pigs. The only things we add to season them are paprika (locally produced "pimentón"), a little garlic and a little salt. The Lomito is blade end of the Loin and is the juiciest and most prized part of the animal (there are two in each pig). The outer fat is removed from the loins and they are seasoned and marinated for 48 hours, then stuffed into natural tripe casings and cured for 8-12 months. When the Lomitos reach the optimum point of curing, they are stored in an earthenware jar. Presentation: This cured meat comes individually vacuum sealed to keep it as fresh as possible for as long as possible.
